For Priscilla’s birthday (July 6) we visited the CIA in Hyde Park, NY. The CIA is the Culinary Institute of America. This school teaches all aspects of the food hospitality business. The tuition is $40,000 per year which includes room and board, a knife set and uniforms. The students train in actual kitchens for 15 weeks and then work at a restaurant anywhere in the world for 15 weeks. We had dinner at the Italian restaurant Caterina De’ Medici which is one of five working restaurants on campus. The students operate the restaurants to get practical experience.

Carl (Chef) Wooden – quote of the day.
“Ships don’t sink because of water around them but because water gets in them. Don’t let what’s happening around you get inside you and weigh you down. Stay up. Stay positive.
